Souffler means to blow, and Capitol Restaurant were dreaming up their festival offering on a particularly blustery Wellington day. It was suddenly obvious that their story this year is the mercurial Wellington wind. The team are excited by the opportunity to make crayfish bisque and to cure their own salmon roe for this dish.
