Dish Description: Tiger prawn risotto with a Yellow Brick Road butter poached Crayfish medallion and saffron oil.
In embracing the theme, the team at Boulcott St Bistro take a familiar ingredient they use often and change its form. The Crayfish is rolled into moulds, before butter poaching it and slicing it on top of the risotto, changing the form of the crayfish.
