Our most popular entree, this ever-evolving dish celebrates wild venison sourced from the Tararuas, Kahurangi and Fjordland National Parks. ⠀ Seared briefly in a hot pan (the Tataki method) ensures that the quality of the meat shines through. Through the changing seasons, treatments such as fruit puree, fried Beluga lentils, pickled vege and fresh fruit have made an appearance, but the venison remains a stalwart and the Tataki method has remained through every variation of the dish. Beloved L.A food reviewer, the late Johnathan Gold enjoyed the venison tataki on his visit to New Zealand for Wellington On a Plate 2017. He posted the dish on his Instagram account simply captioned "Deer again, naturally".
