From 1937 to 1972, the building that currently houses Cinderella was home to two butchers, Boyds Quality Butchers and McKnight Meats. This dish is a homage to classic butchery preparations that would have been so familiar to shoppers of these butchers, as well as the beast-feast nights that took place once a month at the more recent residents, the Bresolin.
