Boil Up to the Bumper

Manni Hunt (Ngāi Tahu) grew up having this classic Māori dish as a staple part of weekly meals with his family. Manni is a seasoned chef in Wellington having worked at Manon, Big Bad Wolf and Dockside and is currently in the kitchen at Bin44. He still enjoys boil up on the marae for special family occasions. This version combines Manni's love of French cooking with native Aotearoa flavours of horopito and mānuka.

Dish Description: Pork and mānuka-smoked bacon bones, potatoes and watercress boil up served with Arobake Rāwena Bread and horopito butter.
