Of the Sea

Bartolo Russo is believed to be one of the first Italians to immigrate to New Zealand. A keen fisherman from the island of Stromboli, Italy, his sharp business sense saw him prosper here in Wellington. A known Eastbourne resident, he became a well-established land-owner, fisherman and later a market gardener, with extensive greenhouses growing grapes and tomatoes.

We tell the story of Barto on a plate, bringing together his love of the sea and his native-Italy.

Dish Description: Dali olive oil-poached market fish with Esther's grape jelly, Prana Greens baby watercress, Dali Kalamata olives and Esther's pickled fennel flower salad.
