Dish Description: Herb oil confit salmon glazed with an Ata Rangi Kahu Botrytis Riesling sesame dressing served with a spring onion, lemongrass and coconut velouté, Mushroom House pink mushrooms, ginger and watercress salad and 26 Seasons microgreens.
Inspired by mould in two ways; incorporated into the dish through mushrooms that also look a lot like mould growing at the base of the dish, and through using botrytis dessert wine.
