Food plays a central role in Pacific Island culture, representing prosperity, generosity, and community support. Taro and chop suey are staples for many Polynesian cultures and feature heavily in family gatherings and cultural events. The team took inspiration from these dishes as well as Vietnamese Phở, a simple yet complex arrangement of flavours and ingredients which complements traditional Pacific dishes. This festival dish is inspired by the multi-cultural community of Wellington.
