Wellington's cafe culture is legendary, springing up in the 1950s with immigrants arriving bringing exotic new foods and espresso machines. They began initially as milk bars, over time becoming more like the cafés we recognise today, and were hubs for artists, writers and musicians, who would while the hours away late into the night debating the arts and hot topics. Such artists have inspired the chefs at The Botanist, who are bringing their artistry to food with each course being represented by a different artist. Based on art by Jackson Pollock, whose style was abstract impressionism, and applied to both the appearance of the dish and through strange and interesting flavour profiles this is The Botanist’s way of acknowledging the birth of the Wellington cafe scene, through the marriage of art and food.
