Lieut.-Commander Edgar J Coene was the US officer in charge of the boat harbour and sheds when American armed forces were stationed in NZ during WWII.
While stationed in Wellington, he successfully organized the boat pools receiving a commendation from Admiral Halsey, for his industry, initiative, and creative ability.
Commander Coene's ability to manage his troops, his fleet and their wellbeing, navigating them through a stormy period and the turbulent seas around Wellington made him a key figure in Wellington's history. He helped create the safe harbour that is still with us, the boat sheds, the buildings and our venue are named in his honour.
This dish pays homage to the history of the venue and to Commander Coene's mastery of Navigating the Cook Straight, we will be representing our depiction of the cook straight on one of those a dark and stormy nights.
Dish Description: Pan-fried snapper, dark sea and rum foam, Six Barrel Soda Co. ginger syrup, lime powder and beer batter shards with kūmara and parsnip chips.
