Welcome to the Visa Wellington On a Plate Restaurant & Cafe operator application.


Visa Wellington On a Plate 2017 will take place from 11 – 27 August.

Please read ALL of the information on this page before you start completing your application form.


Restaurant operators are invited to apply to participate in:

  • Dine Wellington (including Burger Wellington and Cocktail Wellington)
  • Festival Events

Dine Wellington presented by Wellington Wine Country

Dine Wellington is your opportunity to really push the boundaries. We want to see different, inspiring and provocative menu ideas that will have your customers queuing at the door. Use Dine Wellington as an opportunity to try something new, test an idea and show customers what you are made of!

We are delighted to welcome Wellington Wine Country as our official presenting partner of Dine Wellington in 2017.  Wellington Wine Country is proud to be bringing you Dine Wellington as part of Visa Wellington On a Plate. Wellington Wine Country encompasses the three wine sub-regions of Martinborough, Gladstone and Masterton. Most of you will already have your favourite wines from our region and Dine is the perfect opportunity to discover some new favourites! Wellington Wine Country is all about combining city life in our coolest little capital with country living in our stunning rural playground. In 2017, we ask that you consider the festival theme of ‘Celebrating food as part of New Zealand’s culture‘ when you create your Dine Wellington menu. Find out more information about the festival theme here.

In addition to these opportunities, your MAIN COURSE dish will be entered into the Festival Dish competition.

To apply to be part of these activities, fill out the Dine Wellington application form. Applications close at 11.59pm on Monday 20 February. ABSOLUTELY no late entries will be accepted. 

New Dine Wellington Format

We did a bit of research following the 2016 festival to find out what people thought about Dine Wellington. This research has led us to make some further changes to Dine Wellington in 2017, the Dine Wellington format has been simplified to make it easier for a wider range of eateries to get involved, as well as make it more complementary to diners who wish to order the Burger Wellington offering.  The revised Dine Wellington format is as follows:

Dine Wellington 2017 Lunch Format

  • 1 x Festival Dish – Main Course (offered alongside Burger, if a Burger is offered)
  • No set entree or dessert options (but if diners wanted to, they could order off the a la carte menu)
  • A non-alcoholic beverage option will be available at a lower inclusive price point
  • Change in terminology around the alcoholic beverage…previously “Choose any two courses plus a Wellington regional beverage”; now “Matched Wellington regional beverage”

Dine Wellington 2017 Lunch Pricing

Up to 2016 – Any Beverage Match 2017 – With Alcohol 2017 – With Non Alcoholic Beverage

So this means, if you offer a $25 menu (including an alcoholic beverage), you also offer a $20 option that includes a non-alcoholic option.

Dine Wellington 2017 Dinner Format

As per 2016 –

  • Up to five courses
  • MUST include the Festival Dish – Main Course (as per lunch offer)
  • Can include Burger, but this is not compulsory
  • Flexible pricing policy (Restaurants can set their own price level)

New for 2017 –

  • Must include alcoholic vs non-alcoholic pricing
  • Include the option of upgrading to a bottle of the matched wine for $X (price determined by restaurant)

Making a Dine Wellington application

Before you start the application form/s, please take the time to read the entire form carefully to see what information you will need to have ready. Then set aside enough time (approx. 20-30 minutes per form) to enter all the information at once.

Remember to ensure that your information is accurate and enticing for customers. We appreciate that you may not have all the details just yet but please ensure you are putting your best foot forward.

The character limits indicated within the Dine Wellington application form are maximum for that section. If the total character count for an overall Dine Wellington menu is too high then we reserve the right to edit any descriptions to ensure the overall character count for your Dine Wellington menu fits within the requirements. Please note that in 2017 we have asked you to list your local suppliers separately – they may not need to be included in your menu description.

Any form filled in with “TBC”, “I don’t know” or other equivalents will not make it through to the Curating Committees.

Please note that submitting an application form does not guarantee your acceptance into Dine Wellington (or Burger Wellington or Cocktail Wellington). Your application will be reviewed by the Visa WOAP Dine Wellington Curating Committee and you will be notified as to whether your application has been successful in early March 2017. Please remember to…

  • Prepare ahead of time to make your application a lot quicker!
  • Consider what’s in season in August and what’s available from our fabulous Wellington regional food and beverage suppliers.
  • In 2017, all Dine Wellington menus will be entered as a Festival Dish, which will be jointly awarded by both the public and a panel of judges. Find out more here.
  • Think about what company information (description of your eatery) you’d like to use as this is the first question you need to answer online (registering your venue).
  • If your application is accepted, we will be asking for a few more bits of info, including imagery. This imagery sits alongside your website and programme guide Dine Wellington listing. We have a great photography deal available to get some snazzy images taken if you don’t have any. Please indicate your interest on the application forms and more information will be supplied if your application is accepted.

Garage Project presents Burger Wellington

We are delighted to announce that Garage Project are returning as your burger’s best friend. The team at Garage Project have again prepared a full list of beers available for your burger match to select now for your Garage Project presents Burger Wellington application.  Some of these beers are an exclusive release for Visa WOAP. Full details are available on the Dine Wellington application form. The 2017 beer options are:

Exclusive Burger Wellington Beers*:

  • Trois Fleurs – 4.0% Garden Grisette / Grisette, a low alcohol saison, brewed with lemon verbena, calendula, chamomile and elderflower and blended with a portion of sour beer to create a refreshing effervescent light gold beer. Designed to complement delicate flavours while offering enough tartness to cut through and refresh the palate in more robust burgers.
  • Loral Royale – 5.6% Sessionable IPA / Loral Royale, soul mate to the classic beef burger. Extravagantly dry hopped with newly released US hop Loral, this is a sessionable IPA with a malt bill that delivers complimentary caramel notes backed up with a juicy, resinous hop hit to punch through the richest cheese and char grilled meat.
  • Hazelnut Bruin – 5.8% Belgian Brown Ale / A Belgian style bruin or brown ale, brewed with Dark Belgian candy sugar, rich caramel and biscuit malts, roasted hazelnuts and fermented using a classic trappist yeast strain producing dried fruit and spice notes. Designed to complement and build on the rich caramelized components of burgers while offering enough bitterness and spice to balance.

*These beers will only be available to participating Garage Project presents Burger Wellington restaurants during the Visa WOAP festival period as exclusive releases. These are new, unannounced beers. Please use them to help with possible matches and combos but we ask that you treat them as confidential until the official Visa WOAP programme launch on 06 June 2017.

Existing Garage Project cans:

  • Hāpi Daze – 4.6% Pacific Pale Ale / Sessionable in strength, bright golden in colour and loaded with generous quantities of aromatic New Zealand hops. Very friendly indeed.
  • Garagista – 5.8% IPA / Brewed and double dry-hopped with New Zealand, Australian and US hop varieties. Great things often start in a garage, after all. Tropical, resin, pine flavours.
  • Death from Above – 7.5% Indochine Pale Ale / PA fusion of American-style pale ale and South-East Asian flavours of mango, lime, Vietnamese mint and chilli. In harmony, not conflict.
  • Pernicious Weed – 8.0% Imperial IPA / A celebration of New Zealand-developed hop varieties Nelson Sauvin and Rakau. Huge grapefruit flavour in a worryingly-drinkable strong IPA.
  • Hakituri – 5.4% Organic Kiwi Pilsner / Brewed with 100% New Zealand Organic hops and malts with an extra cold, long ferment for an exceptionally crisp and clean taste, with pronounced citrus tropical notes. Brewed for Visa Wellington On a Plate 2016.
  • White Mischief – 2.9% / Kettle soured wheat, lightly salted and infused with white peaches – a delicate three way salty, sweet and sour balancing act. A little bit of white mischief in a beer where anything gose. Brewed for Visa Wellington On a Plate 2015.
  • Fugazi – 2.0% / Don’t be deceived, sometimes things are not what they seem. The modest strength belies the flavour within. A complex selection of malts and generous dose of Sauvin and Simcoe hops create a light but satisfying beer that punches well above its weight. A true sheep in wolf’s clothing.

Garage Project saw strong success with price specials and combos in Garage Project presents Burger Wellington last year, especially with a beer and burger matched under $30. Cocktail Wellington brought to you by Spirits New Zealand

Launched in 2015, Cocktail Wellington brought to you by Spirits New Zealand is a cocktail/tapas match competition specifically developed to work with bars, cocktail bars and restaurants with bars, to promote Wellington’s very talented cocktail-making community.  Cocktail Wellington works just like the well-known, Garage Project presents Burger Wellington. Restaurants may only participate in Cocktail Wellington if they are participating in Dine Wellington.

How Cocktail Wellington works

  • You are invited to enter a “Wellington-inspired” Cocktail
  • The Cocktail must be matched with a regionally-inspired tapas
  • In addition to your cocktail, you must also offer a non-alcoholic alternative (this can be any non-alcoholic match to you tapas)
  • Content developed for Visa WOAP Programme Guide and VisaWellingtonOnaPlate.com, as per other Visa WOAP platforms
  • Consumers try cocktails and score each out of ten on cocktailwelly.com (scoring closes Thurs 24 Aug)
  • Consumers scores determine our five finalists, who will then be judged over the final weekend of the Festival and finally, at the Festival Awards Night on Thurs 31 Aug.
  • Cocktail consumers who enter scores have the opportunity to win a prize and the winning restaurant/bar will also score a sweet prize! (watch this space)

Please note: Visa WOAP encourages Host Responsibility.  Remember that the average person can process one standard drink per hour. The number of equivalent standard drinks of your cocktail will be noted in your listing.


Festival Events

To apply to operate a Festival Event, please complete the Festival Events application form. Applications close at 11.59pm on Monday 20 February. ABSOLUTELY no late entries will be accepted. 

Festival Events showcase the region’s innovative food and beverage offerings as well as the personalities involved in the region’s cuisine scene.  We are looking for different, inspiring and provocative Festival Events that leave people wanting more! They must truly be an articulation of the festival vision.

Making a Festival Event application

Before you start the application form/s, please take the time to read the entire form carefully to see what information you will need to have ready. Then set aside enough time (approx. 20-30 minutes per form) to enter all the information at once.

Please note that submitting an application form does not guarantee your acceptance into the Visa WOAP Festival Events programme. Your application/s will be reviewed by the Visa WOAP Festival Events Curating Committee and you will be notified as to whether your application/s has/have been successful by early March 2017. Pricing your Festival Event

The Visa WOAP online ticketing system is operated by Ticketek. There have been some recent changes to the legislation around the presentation of ticket charges (i.e. ticket issuance fees), which mean that these will need to be considered when setting your ticket prices. What this means is that once you have determined your ticket price, please add $3.00 to the price. You may like to round it to the nearest $5 or $9.

Please note: Credit Card fees are added on top of ticket price at the time that the transaction is made (and is dependent on the credit card used.

Please remember to…

  • Start thinking about the information you need to provide for your application. Like last year, we ask you a few more questions. Give some thought to how your Festival Event will ‘run on the day’ (i.e. the flow of the event), do you need an MC?  What is the ‘attendee experience’ going to be like? We need all this information included in your application.
  • Consider what is your ‘point of difference’. Would someone travel from out-of-town to your Festival Event? Why? What’s your hook? If not, what could be modified with your idea/concept to attract an out-of-towner’ to the Wellington region for your Festival Event?
  • If your application is accepted, we will be asking for a few more bits of info, including imagery. This imagery sits alongside your website and programme guide Festival Event listing. We have a great photography deal available to get some snazzy images taken if you don’t have any. Please indicate your interest on the application forms and more information will be supplied if your application is accepted.

Application Fees

Like last year, a deposit payment will be required to be paid for all Application Fees.  This deposit can be paid via credit card or direct debit at the time of your application. These fees are unchanged from 2016.

The deposit fees for Visa WOAP 2017 are:

  • Dine Wellington – $250 +GST
  • Festival Events – $250 +GST
  • Burger Wellington – $100 +GST
  • Cocktail Wellington – $75 +GST

If your application is not accepted this will be refunded to you in full in early March 2017. If your application is successful the deposit amount will be deducted from your final Application Fee total or Festival Event commission.
